Khao Soi is a yellow curry soup with egg noodles , “Khao Soi” or “Khao Soy” is widely served in Northern Thailand, Chiang Mai and Chiang Rai. The name means “cut rice” in Thai language. Traditional Khao Soi is developed from “Papa Soi” hand-sliced rice noodles in clear broth which was introduced by Muslim Yunnanese who imgrated from Southern province of China to Northern Thailand via Myanmar or Lao.
Chiangmai Khao Soi is a thick coconut milk heavy curry paste with freshly boiled egg noodles and beef or chicken served with lime juice, sliced fresh shallot and pickled chinese cabbage.
